Dooleys cooks up two wins in ‘Perfect Plate’

DOOLEYS Regents Park Sports Club has won the Western Metropolitan Perfect Plate Award for 2021 for its famous Lamb Rump dish.

Out of the 159 participating clubs from across NSW that plated up over 50,000 competition dishes, Dooleys Regents Park was voted number one for the Western Metropolitan Region and second overall in NSW in the Small Club Category.
A big congratulations to the Dooleys team lead by Chef Madan Panit, General Manager Tomasz Pytracyzk and Food and Beverages Manager Gaby Tannous.
“Thank you also to our amazing public who tasted and voted for it; it’s sure to be a popular menu item when Dooleys reopens in the coming weeks,” Chef Madan said.
His own creation, he cooked the lamb rump in a water bath to keep the proteins and moisture intact before finishing off with a pistachio and herb-crusted crumb ahead of a short, final bake.
“I did try it on our members initially and they all said it was beautiful so that’s what I decided to submit for the competition,” he said.
“I’m so pleased the judges loved it too.”
Perfect Plate ambassadors – celebrity chefs Manu Feildel and Colin Fassnidge – revealed they were blown away by the quality of club cuisine.
“I’ll admit, before travelling around the state to sample Perfect Plate dishes, I hadn’t spent very much time in clubs, but the calibre of food is incredible,” Manu said.
“It just goes to show that you don’t need to go to a fine dining restaurant to experience fantastic food, it’s right there at your local club.”
Colin said: “I was surprised by the variety of food on offer at clubs. During the competition I tasted everything from seared scallops to crispy pork belly, and the passion that the clubs’ chefs have for their food was great to see.”
