4 medium zucchini, quartered lengthwise
40g butter, melted
1 clove garlic, crushed
1/2 cup finely grated parmesan cheese
2 tablespoons finely chopped parsley
1 tablespoon finely chopped thyme leaves
- Arrange zucchini in a single layer, skin side down, on a paper lined baking tray. Combine butter and garlic and brush evenly over zucchini.
- In a separate bowl combine parmesan, parsley, thyme and season to taste with salt and freshly ground black pepper. Sprinkle over zucchini. Bake at 200C for 15-20 minutes or until golden brown. Serve immediately.
